Ingredients

1 Onion, finely chopped

3 Leeks, diced

5 Garlic Cloves, finely chopped

7 Potatoes, cut into 1 inch cubes

9 pinches of salt

1 TBSP. dried thyme (or fresh if available)

1 TBSP. dried rosemary (or fresh)

1 tsp. paprika

1 tsp. cayenne pepper

5 TBSP olive oil

1 lucky penny (scoured clean)

Preparation

Using a big soup stock pot, saute the garlic, leeks, onion, in the olive oil. Add the potatoes when the garlic mixture is soft and then add enough water to the pot to cover the potatoes with an inch of water. Next, add the seasonings and bring mixture to a boil. Finally, kiss the penny for luck and add it to the stew and simmer it for at least 2 hours (I typically simmer the stew for at least 5 hours).
