Ingredients
1/2 white onion, chopped
3 stalks celery, chopped
1/2 green pepper, chopped
olive oil as needed for saute pan
1 tablespoon chopped garlic
1 pound bag of dried black-eyed peas
4 cups boiling water
16 oz of andouille sausage
1 Tbs Joe’s Hot Stuff or cayenne pepper/salt/pepper to taste.
Preparation
Bean Prep: Wash and pick over the peas while boiling 4 cups water. Add peas and bring to another boil. Boil for 5 minutes then remove from heat and let stand for 1 hour. Do not drain the beans as you’ll need the water to cook the beans with the remaining ingredients.
Remaining prep: Chop peppers, onions, celery, and garlic and saute for about 5 minutes (until softened) in olive oil. Chop sausage in quarters. After beans have finished standing for 1 hour, stir in all ingredients and bring to a boil, and then lower to a simmer. Simmer until beans are softened and flavors are blended to your taste. Mine simmer for about 45 minutes.
Serve it up with a mess of greens and some cornbread and have a very Happy New Year!
