Ingredients

1 1/2 C flour

3/4 C sugar

1 tsp baking powder

1/4 tsp baking soda

Finely shredded zest of one large lemon

salt

2 large eggs

1/2 C 1% milk

1/4 C canola oil

1 tsp vanilla extract

glaze: 1/3 C sugar

juice of one large lemon (~3 1/2 T)

Preparation

Whisk together flour, sugar, baking powder, baking soda, lemon zest,and pinch of salt until well mixed. In another bowl, mix eggs, milk, canola oil and vanilla. Pour the wet ingredients into the dry and mix with a spatula until just combined. Pour into a greased 8.5x4.5 inch pan. Bake 40 minutes at 350. Poke holes into loaf with bamboo skewer. Mix glaze ingredients. Bring to a boil and cook for ~ 3 minutes. Pour over cake and let cool completely in pan. Remove from pan.
