Ingredients

1 cup whole wheat or all purpose flour - plus up to ¼ cup if mixture is too thin

1 ½ cups quick cooking oats

½ cup packed light brown sugar

1 ½ teaspoon baking soda

1 teaspoon cinnamon

½ teaspoon nutmeg

½ teaspoon ginger

other spices (allspice, pumpkin pie spice) to taste

2/3 cup applesauce

1 teaspoon vanilla extract

½ cup Craisins (half a package)

1 egg white (3 tablespoon egg substitute)

Preparation

Mix all ingredients together in medium bowl.

Drop mixture by tablespoonfuls or cookie scooper onto nonstick cookie sheet.

Bake at 350 degrees for 8-10 minutes.

Cool on cookie pan for 2-3 minutes and then transfer to wire racks to cool completely.

Makes approximately 3 - 3 ½ dozen small, soft cookies.

Recipe is easily doubled.
