Ingredients

8 cups old fashioned rolled oats

2 cups nuts, coarsely chopped or broken, or whole seeds

Scant 1 tsp. salt

2 tsp. cinnamon

1 cup honey

1/3 cup water

1/3 cup canola oil

1 tsp. vanilla extract

Preparation

Mix oats, nuts or seeds, salt and cinnamon in a llarge bowl. Heat honey, water, and oil in a small saucepan or in the microwave just until boiling. Add vanilla and stir well to mix. Stir liquid ingredients into oat mixture, and mix well. Spread on a roasting pan or rimmed cookie sheet, and bake in a preheated 350 degree oven for 45 min. or until golden brown, stirring well after 15 minutes, then every 10 minutes. Let cool in pan, then store in an airtight container or ziplock bag.
