Ingredients
1 can(s) (14-oz.) artichoke hearts, drained and chopped
1 package(s) (10-ounce) frozen chopped spinach, thawed and drained
1 container(s) (8-oz.) yogurt, plain, lowfat
1 cup(s) (shredded part-skim, low-moisture) mozzarella cheese
1/4 cup(s) chopped green onion
1 clove(s) garlic, minced
2-4 tablespoon(s) (chopped) red bell pepper
Preparation
Preheat oven to 350ºF. In a bowl, combine all ingredients except bell pepper; mix well. Pour mixture into 1-quart casserole dish or 9-inch pie plate.
Bake 20 to 25 minutes, or until heated through. Sprinkle with chopped red bell pepper and serve with crackers, if you like.
