Ingredients
4 eggs
1 c. coarsely chopped pecans
1 tsp. vanilla
1 (1-oz.) square unsweetened chocolate
3 oz good dark chocolate
1 c. flour
1 c. (2 sticks) butter
1/4tsp. salt
2 c. sugar
Preparation
Preheat the oven to 300 degrees. Grease a 9- by 13-inch pan. Toast the pecans in a large frying pan over medium-low heat, stirring frequently, until they begin to color and become fragrant, about 7 minutes. Pour them out of the pan immediately and set aside to cool.
In a medium saucepan over low heat, melt the chocolates and butter together, stirring frequently. Remove from heat as soon as all is melted, and pour into the large bowl.
Using an electric mixer, beat in the sugar, then the eggs two at a time, beating well after each. Beat in the vanilla. Beat in the flour and salt. Stir in the toasted pecans.
Spread the batter EVENLY into the prepared pan and bake 40 to 45 minutes, until a toothpick in the center comes out (just barely) clean. Cool, then cut into bars.
