Ingredients
1 cup low-carbohydrate baking mix (20.5 carbs)
1 egg (.6 carbs)
1 cup heavy cream (Trader Joe’s brand heavy cream carbs = 0)
Optional:
1/4 cup wild blueberries (3.5 carbs)
1/4 cup chopped, toasted walnuts (2.1 carbs)
Preparation
Mix all ingredients. let sit 5 minutes to allow baking powder to activate.
Fry in butter on preheated skillet.
Do the math to figure out your per-pancake carb count; it depends on how big you like your pancakes, of course, and what add-ins you like and want to indulge in.
