Ingredients

1 can diced tomatoes (14 oz)

1 can albacore tuna in h2o

½ large onion diced

1 cup diced zucchini

4 large olives - chopped

2 t capers - chopped

1T olive oil

1 clove garlic - chopped

salt, pepper to taste

fresh or dried herbs of your choice

Cooked Pasta - about 1/2 pound

Freshly grated Parmesan Cheese

Preparation

Heat sauce pan on medium heat. Add olive oil and onion. Saute a minute or two until just barely tender and translucent. Add zucchini and garlic, saute another two - three minutes until zucchini becomes tender-crisp. Pour over entire can of diced tomatoes and stir. Cook over medium heat approximately 5-8 minutes. Add chopped olives and capers and stir. Add can of drained flaked tuna and stir. Add salt and pepper to taste. Add any herbs desired. Top cooked pasta with the sauce and garnish with freshly grated Parmesan cheese
