Ingredients

1 lb. Great Northern beans

1 t baking soda

pinch ginger

1/4 teaspoon mustard

lt brown sugar and regular sugar or little molasses

salt

to taste (make juice sweet)

Preparation

Soak beans overnight. Drain, add fresh water, cook slowly with 1 teaspoon baking soda. Watch, rinse when water turns green. Drain, add clean water to 1/2 inch over top of beans. Add pinch ginger, 1/4 teaspoon mustard, sweeten to taste with brown and regular sugar or little molasses, little salt. Test jusice after boils, cook until beans tender. Put in pan, bake at 350 degrees with bacon and or drippings on top until warm and browny on top.
