Ingredients
6 cups Spring Mix greens (or 2 cups of each, arugala, baby spinach, baby beet greens)
1 cup pomegranate seeds
¼ cup toasted pecan pieces
¼ cup crumbled feta cheese
¼ cup very thin slices of red onion, quartered
Dressing:
2 TBLS Balsamic vinegar
2 TBLS Red wine vinegar
2 TBLS Maple Syrup (real)
4 TBLS Virgin olive oil
Fresh black pepper to taste
Preparation
Add greens to shallow salad bowl, sprinkle pomegranate seeds, pecansand feta. Place onion in a small bowl. Wisk together dressing ingredients and toss with onion. JUST before serving, add onion & dressing to bowl and toss.
