Ingredients

1 can black beans, rinsed

1 can shoepeg corn, rinsed

1 can Rotel diced tomatoes

4-5 green onions, sliced thin

1 bunch of cilantro, chopped

1/4 tsp. ground cumin

1 bottle Paul Newman’s Balsamic dressing

1 bag tostito scoops

Preparation

Mix all ingredients together, excluding the scoops, and let sit in the refrigerator for an hour or until ready to serve.

Serve with Tostito Scoops.
