Ingredients

MEASURE INGREDIENT

3 Pounds Lobster Meat (cooked and diced)

1 Each Red Bell Pepper, minced

½ Cup Red Onion, minced

½ Cup Celery, minced

1 teaspoon Garlic, minced

¾ Cup sharp cheddar cheese (grated)

¼ Cup Fresh Cilantro Leaves, minced

1-2 Teaspoon Hot Sauce

6 Ounces Cream Cheese

½ Cup Japanese Mayonnaise (or regular mayonnaise)

2 Each Eggs, whipped

2 Cups Fresh Bread Crumbs (or more if needed for proper consistency)

To Taste Salt

To Taste Fresh Ground Pepper

Flour for Dusting

Oil for Frying

Preparation

  1. Combine all ingredients (except for flour and oil) in a large bowl, being careful not to over-mix.
  2. Portion out lobster mixture using a large ice cream scooper and shape into 3 inch cakes, set aside.
  3. Place a large skillet over high heat and add enough oil to cover the bottom of the pan.
  4. Dust each portioned cake with flour and place into the hot skillet, turning once they have turned golden brown. Remove from skillet and place onto a sheet pan.
  5. Enjoy.
