Ingredients
MEASURE INGREDIENT
3 Pounds Lobster Meat (cooked and diced)
1 Each Red Bell Pepper, minced
½ Cup Red Onion, minced
½ Cup Celery, minced
1 teaspoon Garlic, minced
¾ Cup sharp cheddar cheese (grated)
¼ Cup Fresh Cilantro Leaves, minced
1-2 Teaspoon Hot Sauce
6 Ounces Cream Cheese
½ Cup Japanese Mayonnaise (or regular mayonnaise)
2 Each Eggs, whipped
2 Cups Fresh Bread Crumbs (or more if needed for proper consistency)
To Taste Salt
To Taste Fresh Ground Pepper
Flour for Dusting
Oil for Frying
Preparation
- Combine all ingredients (except for flour and oil) in a large bowl, being careful not to over-mix.
- Portion out lobster mixture using a large ice cream scooper and shape into 3 inch cakes, set aside.
- Place a large skillet over high heat and add enough oil to cover the bottom of the pan.
- Dust each portioned cake with flour and place into the hot skillet, turning once they have turned golden brown. Remove from skillet and place onto a sheet pan.
