Ingredients

2 cups chopped cooked lobster

1 large tomato, diced

2 cups green beans, cut into 1/2 inch length, boiled for two min and then 2 min in ice water. Take out of ice water and dry.

1 avocado, diced

1 TBS chives, chopped fine

1/4 chopped red onion, chopped

1 TBS lime juice

1 cup mayo or greek yogurt

1/4 chopped red onion (into mayo)

1 TBS specialty mustard

Preparation

Blanch/icewater beans; dry Add beans to chopped tomatoes, chopped red onion, chopped avocado, chives. Toss with lime juice. Add mayo, mustard and other chopped red onion. Salt and pepper to taste. Mix lobster with veggies, mix in mayo. Serve on bed of spinach or tatsoi
