Ingredients

1 1/2 cups all-purpose flour

1 teaspoon salt

1 1/2 teaspoons baking soda

1/2 cup apple butter

1/4 cup olive oil (NOT extra virgin)

1/2 cup brown sugar

1/3 cup honey

1 banana, mashed

2 eggs

1 teaspoon vanilla

1 cup chopped pecans

2 cups uncooked rolled oats

1 cup mini semi-sweet chocolate chips

Preparation

Preheat oven to 325 degrees.

In medium bowl, sift flour with salt and baking soda; set aside.

In large bowl, beat together apple butter, olive oil, brown sugar, honey, and banana. Beat in eggs and vanilla.

Stir in sifted dry ingredients, pecans, rolled oats, and chocolate chips.

Drop cookie batter by double tablespoonfuls onto baking sheet covered with parchment paper.

Bake for 10 minutes; cool on racks.
