Ingredients

1 tbsp olive oil, plus more for greasing pan

3 cups cooked whole grains (I use bulgar mostly)

2 cooked Italian-style chicken sausages, diced (I frequently sub black or garbanzo beans for this. I like to make it vegetarian)

1 cup grated provolone

1 15 oz can of diced tomatoes with liquid

1 large red bell pepper, seeded and diced

1/3 chopped fresh parsley or basil

1/4 cup pine nuts

1/4 cup grated Romano cheese

1 tsp minced garlic

1 tsp dried oregano

1/4-1/2 tsp crushed red pepper flakes

salt and pepper to taste

Preparation

Preheat oven to 375. Grease an 8 inch square baking pan. In a large bowel combine all of the ingredients, holding back 1/4 cup provolone. Place in pan, cover with foil and bake until hot (30-35 min) Uncover and sprinkle the remaining cheese on top. Baike until cheese is melted and caserole is bubbly, 3-5 min.
