Ingredients
1/3 c extra virgin olive oil
1 large onion,chopped
6 garlic cloves, chopped
2 tbsp smart balance butter
3/4 teas dried hot pepper flakes
1/4 teas dried oregano
1/3 c white wine
1/3c clam juice,bottled
1lb linguini
2 dozen small clams
1/3c parsley
Preparation
Heat oil, med, sauté onion, 4 min Add garlic, red pepper, oregano, cook 2 min Stir in wine , clam juice,chopped clams,butter and boil uncovered 3 min until reduced. Then simmer 15 min add whole clams & parsley, cook covered until clams open about 5 min. Serve over linguini.
