Ingredients

salt & fresh ground pepper

6 Tbsp extra virgin olive oil

3oz thinly sliced pancetta or bacon, cut into julienne strips.

1 1/4 lb pasta

3 egg yolks

6 Tbsp freshly grated Parmesan cheese

Preparation

In a large pot bring 6qt water to a boil. In a large frying pan, heat the olive oil and pancetta (or bacon) together over med heat. Saute until crisp and golden, about 5 minutes. Meanwhile, add the pasta to the boiling water and cook until barely al dente. Just before pasta is cooked, in a bowl beat the egg yolks with cheese & season with salt and pepper. Drain pasta and transfer it to the frying pan containing the pancetta. Stir over low heat for 2 min. Arrange past on a warm platter, pour beaten egg mixture over the top and immediately toss well to coat. Serve piping hot.
