Ingredients

3 TB. sweet butter

2 cloves garlic - crushed

1/2 lb. sweet Italian Sausage

1/2 cup dry white wine

1 cup fresh mint, chopped

1 tsp dried oregano

1 lb. linguine

3 tb. salt

fennel seed

lemon

parsley

Preparation

In medium skillet, melt the butter, add the crushed garlic and saute until golden.

Remove the sausage meat from the casing, crumble and place in skillet. Saute until the meat is browned.

Remove the garlic, add the wine, mint and oregano. Mix well.

cover and simmer 6-7 minutes. Turn off the flame and let stand. Cook the linguine in salted boiling water.

Drain pasta and place in large bowl. Add the sauce and toss well. Sprinkle with parsley.

Serve immediately.

(Fennel seed and lemon are optional.)
