Ingredients

1 to 1 1/2 pounds chicken breast, skinless and boneless.

Tony Chacheres or Adobe seasoning

1 14-oz can Italian Tomato Sauce

1 bell papper, diced

1/2 onion, diced

Salt and pepper, to taste.

Cumin to taste.

Garlic powder to taste.

Cooked white rice.

Optional: Spanish or Black Olives

Preparation

Cut the chicken breasts into bite sized pieces.

Saute the chicken breasts in olive oil until cooked through.

While the chicken is cooking; Put the tomato sauce in a large sauce pot. Add about 4-5 cans water.

Add the diced bell pepper and onion. Season with salt and pepper; cumin and garlic powder to taste.

Opttional: Add the olives.

Add chicken to the pot.

Bring to a boil; then turn heat down and simmer for about 20 minutes.

Serve over cooked white rice.
