Ingredients
1/2 kg (1 lb plus 1 oz) brown sugar
1 liter (4 cups) water
100 g (3 oz) yeast
2 teaspoons salt
3 eggs
500 g (1 lb plus 1 oz) flour
700 g (1 1/3 lb) rye flour
700 g (1 1/3 lb) whole wheat flour
2 tablespoons anise seeds
1 12 teaspoons fenugreek seeds
Preparation
Grind anise and fenugreek seeds in a mortar. Mix everything in a very large bowl - dough will be very thick, but flour should be absorbed. Add more water if necessary. Cover bowl with plastic and store overnight in a cool place (not refrigerator though).
Shape dough into 3 or 4 loaves. Bake at 200 C for 40-60 min.
