Ingredients
3# red potatoes, in 3/4" cubes
Vegetable cooking spray
2 t salt
1/2 plain non fat yogurt
1/4 c reduced fat mayo
1 4.5 oz can green chiles
3T chopped fresh cilantro
2t sugar
2t grated lime rind
1/4 c fresh lime juice
3/4 t ground cumin
1/4 t ground red pepper
1/2 small purple onion, minced
Preparation
Place potatoes on aluminum foil lined baking sheet. Coat with cooking spray, sprinkle with salt. bake at 450F until tender. Let cool 15 min. Stir together yogurt and next 8 ingredients. Reserve 1/2 dressing. Combine potato and onion in a large bowl; add the reserved dressing. Cover and chill 2 hours. Toss with reserved dressing just before serving.
