Ingredients
2 lbs medium shrimp, peeled and deveined
1/4 cup butter or margarine
pinch salt
4 cloves garlic, minced
1 cup minced scallions
1/4 cup fresh squeezed lime juice
coarsely ground black pepper
tabasco or other hot sauce to taste
1/4 cup fresh ground parsley
Preparation
saute butter butter, garlic, scallions.
Prepare shrimp.
Add the shrimp, lime juice, pepper, and parsley.
cover and refrigerate 2 hrs.
Thread shrimp on metal skewers with onion and red peppers. reserve the marinade for basting.
Grill until shrimp turns pink. (about 4 minutes per side)
