Ingredients

2 Chicken Breasts

1 avocado

1 10 oz. package cherry tomatoes (halved)

1 cucumber (chopped)

1/2 can corn

1/2 can black beans

Cilantro to taste

Dressing:

1/2 cup lime juice

1/4 cup olive oil

2 TB honey

1/4 tsp cayenne pepper

Salt to taste

Preparation

  1. Whisk together lime juice, olive oil, honey, cayenne pepper, and salt. Pour half of mixture over chicken in a plastic bag and marinate for 1 hour. Save the rest for later.

  2. Grill chicken and cut to bite size pieces

  3. Combine chicken, avocado, tomatoes, cucumber, corn, black beans, and cilantro in a bowl. Pour remaining dressing over salad and toss to mix.
