Ingredients

3 large limes, juiced

1 jalepeno pepper, finely minced

1 C fresh parsley, chopped

3 sweet basil leaves, chopped

3 TBLS garlic, chopped

1 tsp white vinegar

1 tsp salt

1 tsp pepper

1/2 tsp cayenne

1 tsp say sauce

1/2 tsp dry chinese mustard

1 C water

2 large boneless skinnless chicken breasts, cubed

24 grape tomatoes

24 small button mushrooms

24 small skewers

Preparation

Combine all ingredients for the marinade. Dice chicken. Place cubed chicken in a zip closure plastic bag and pour 1/2 of the marinade over meat. Close and refrigerate for 30 mins. Place the vegetables in a second plastic bag and 1/4 marinade over and let set for 30 minutes. Slide one piece of chicken, one tomato and mushroom onto each skewer (note: if the skewers are wood; soak in water for 30 minutes prior to using). Grill, basting with the remaining ingredients until chicken is fully cooked.
