2 cups cooked lima beans
1 tablespoon chopped pimiento
2 finely chopped green onions

2/3 cup sour cream
1 tablespoon red wine or balsamic vinegar
2 teaspoon lemon juice
1 teaspoon sugar
3/4 teaspoon salt
1/8 teaspoon black or white pepper
Preparation
Toss together the lima beans, pimiento, and green onion. Whisk together dressing ingredients; stir into bean mixture. Refrigerate for at least 1 hour.
