Ingredients
For bean dip:
3/4 cup canned garbanzo beans, rinsed and drained
1/2 cup ripe avocado, mashed
1 teaspoon extra virgin olive oil
dash of Tabasco sauce
salt and pepper to taste
Toasted pita bread wedges or purchased pita chips
One handful of grape tomatoes, halved
1/4 cup favorite melting cheese (Lily’s favorite is cheddar)
scant 1/4 cup cilantro, roughly chopped
Preparation
In a small bowl, mash garbanzo beans with the back of a fork. Incorporate mashed avocado, adding olive oil and tabasco. Add salt and pepper to taste. Mound bean mixture in the center of serving bowl or plate. Arrange pita wedges around mixture. Top pita and beans with grape tomatoes, cheese and cilantro. Microwave for a minute and a half until bean mixture is warm and cheese has melted. Serve immediately. Enjoy!
