Ingredients
Crepes:
1 cup all purpose flour
1/4 cup egg substitute
1/4 tsp. salt
1/2 tsp. baking powder
1/4 cup sugar
1/2 tsp. cinnamon
1 cup fat free milk
Filling:
1/3 cup apple jelly
1/2 tsp. cinnamon
Topping:
Additional apple jelly
and cinnamon sugar
Preparation
- Combine flour, baking powder, sugar, cinnamon, and salt in medium bowl. Wisk in egg substitute and enough milk to make thin pancake batter.
- Heat medium skillet on low/medium. Spray with fat free cooking spray.
- Pour 1/4- 1/3 cup batter into center of skillet. Rotate pan to spread batter into thin, even layer.
- Cook on first side about 2 mins. or until no longer sticks to pan. Flip crepe and cook additional 30 seconds- 1 minute. 5. Crepe will be light golden brown. Remove from pan.
- Continue making crepes with remainging batter. Be sure to spray pan with cooking spray in between batches.
- Meanwhile microwave jelly and cinnamon in microwace safe bowl for 30 seconds in 15-second intervals, stirring in between. 8. Spread 1 T. jelly over one side of crepe and roll up. Sprinkle each crepe with cinnamon sugar mixture and additional warm apple jelly if desired.
