Ingredients

2 T unsalted butter, melted, plus more to grease the pan

1 cup cranberries

1/2 cup confectioner’s sugar

3/4 cup stone ground cornmeal

1 cup flour

1/2 cup sugar

3/4 t. salt

1 T baking powder

1 cup milk

1 large egg (beaten)

Preparation

Preheat the oven to 400 and grease an 8"x8" square cake pan. Cut cranberries in half and place in a large bowl. Toss with confectioner’s sugar. Combine cornmeal, flour, salt, sugar and baking powder then sift into the cranberry mixture and stir to blend. Mix milk, egg and melted butter then fold into the cornmeal mix. Bake 20 minutes or until the top turns golden and a toothpick in the center comes out clean.
