Ingredients
2 1/2 cups of water
1 cup of brown lentils
3 garlic cloves diced
1 tblspoon cumin seeds
1 medium tomato chopped
1 medium onion chopped
1/4 cup chopped cilantro
2 fresh jalapeno peppers chopped (can also use serrano peppers or if you feel daring 1 haberno pepper chopped)
olive oil
smoked cooked turkey– (OPTIONAL) (i usually use 1 turkey leg)
salt to taste
pepper to taste
curry powder to taste
Preparation
boil lentils in water until tender add salt and pepper to taste add smoked cooked turkey (chopped into pieces) into lentils while boiling
while boiling lentils do following:
sautee onion, jalapeno, garlic in olive oil (just enough to cover pan) until soft
add cumin seeds and sautee with above mixture
add curry powder and chopped tomatoes
finally add chopped cilantro
add all of this to fully cooked lentils (which you should have been cooking while you did this)
stir in and let simmer on low heat for about 10-15 minutes
serve lentils over rice (I prefer Basmati rice)
