Ingredients
4 slices finely diced bacon
1 onion finely chopped
1/2 tsp minced garlic
2 cups red lentils, picked over
4 cups water
1/4 cup ketchup
2 tbl maple syrup
2 tbl vegetable oil
1 tbl cider vinegar
2 tbl dry mustard
1 tsp ground pepper
1 bay leaf
1/2 tsp salt
Preparation
Heat oven to 350 degrees. Fry bacon in a dutch oven over medium-high heat until crisp. Add onion; cook, stirring, until softened, 4 minutes. Add garlic; cook 1 minute. Add lentils,water,ketchup,syrup,oil,vinegar,mustard,pepper and bay leaf. Stir well;season with salt. Heat to a boil. Cover. Place in oven and bake about 35 minutes until lentils are tender.
