Ingredients
1 cup lentils
2 quarts water
1 cup mixed greens
1/2 cup walnut, toasted
1 bunch scallion
1 tablespoon Herbes de Provence
2 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Preparation
Simmer lentils in the water for 30 minutes or until they are tender, stirring occasionally. Drain.
Toss the lentils with the remaining ingredients, adjust the seasoning, and transfer to a serving dish. Serve at room temperature.
