Ingredients

3 cups vegetable broth

3/4 cup lentils, uncooked

1/2 cup brown rice, uncooked

2/3 cup chopped onion

2-3 medium carrots, chopped

1 handful fresh basil, chopped finely

1 small tomato, chopped

1/3 red pepper, chopped

1/4 tsp fresh oregano

1/4 tsp fresh thyme

2 cloves garlic, chopped finely

sea salt, to taste

Freshly ground black pepper, to taste

Preparation

Rinse & drain lentils and rice. Mix all ingredients in a casserole dish. Bake uncovered for 1 hour at 400F. Top with a pinch of salt (if needed) and butter.
