Ingredients

1 1/4 pounds fresh organic spinach

6 cloves garlic, minced

5 tablespoons pine nuts, lightly toasted*

3 teaspoons lemon juice

1/2 teaspoon lemon zest

Preparation

Steam spinach and garlic until spinach is just wilted.

Place in bowl and toss in remaining ingredients.

  • Lightly toast pine nuts in a pan over medium heat for 3 minutes, shaking pan frequently.
