Ingredients
BASE:
50g soft butter
50g golden caster sugar
75g plain flour
TOPPING:
250g cream cheese
150g golden caster sugar
1 egg
Juice and zest of 1 lemon
1 tsp Vanilla extract
Preparation
BASE:
Mix everything into a dough and press into a 7" dish and bake for about 15 minutes until golden.
TOPPING:
Blend ingredients till smooth in a processor. Spoon over the cooled base and bake at 180c for 15-20 minutes till set.
