Ingredients

1/2 cup cold unsalted butter

1 cup plus 2 Tbsp all purpose flour

1/4 cup confectioner’s sugar

2 eggs

1 cup granulated sugar

1 Tbsp lemon juice

1/2 tsp baking powder

Additional confectioner’s sugar

Preparation

In a mixing bowl, combine butter, 1 cup flour and confectioner’s sugar. Press into the bottom of an 11 1/2 x 7 1/2 baking pan. Bake at 350 for 10 minutes. Combine the remaining ingredients except additional confectioner’s sugar. Pour over the baked curst and bake for 20 minutes. Cool. Sprinkle with confectioners sugar.
