Ingredients
crust:
2 c. flour
1/2 c. confectioner’s sugar
2 sticks soft butter
filling:
4 eggs
2 c. sugar
pinch salt
6 tbsp. fresh lemon juice
4 tbsp. flour
1 tsp baking powder
Preparation
crust: mix all ingredients and spread into 13x9 glass lasagna pan. Bake at 350 degrees for 20 m inutes. Do not cool: add the filling right away.
filling: whip the 1st 4 ingredients until light and fluffy then gently fold in the flour and baking powder. Spread onto hot crust and bake at 350 degrees for 25 minutes. Dust with confectioner’s sugar. Cut while still warm. Remove when cool. They freeze very well.
