Ingredients
1 cup flour, plus 2 tablespoons
1/4 cup confectioner’s sugar
1/2 cup butter
2 eggs
2 tablespoons lemon juice
lemon rind
1 cup sugar
1/2 teaspoon baking powder
Preparation
Mix 1 cup flour, confectioner’s sugar, and butter and pack into an 8-inch-square pan with fingers. Bake at 350’ for 15 minutes.
Meanwhile, mix remaining ingredients (including the 2 tablespoons of flour). Pour over the crust right after removing pan from oven, and bake an additional 20 minutes. Remove from the oven and sprinkle with confectioner’s sugar.
