Ingredients
1 cup shredded coconut
flour
granulated sugar
1/4 teaspoon salt
1/2 cup butter
2 eggs
1/4 cup lemon juice
Confectioners sugar
Preparation
Combine coconut, 1 cup flour, 2 tablespoons sugar, and the salt. Cut in butter until the mixture is crumbly. Gather the particles. Press evenly and firmly into an 9x9 inch pan. Bake for 20 minutes in a 375 oven
Beat together the egg, lemon juice, 3/4 cup sugar, and 2 tablespoons flour. Pour over baked crust. Bake for 20 more minutes. Cool in the pan on a rack. Cut into squares. Sprinkle with powdered sugar.
