Ingredients
*12 egg whites (powdered work great, too!)
*1 cup plus 2 tbsp Splenda
*zest of 1 lemon
*2 tbsp lemon juice
*1 ½ cup oats ground into flour
Preparation
preheat oven to 325 degrees. Beat egg whites until fluffy. Gradually beat in Splenda, lemon zest and juice. Slowly mix in oat flour till well blended.
Pour into a Bundt pan and bake 35-40 minutes until toothpick or knife inserted come out nearly clean.
Cool and cut into 6 equal pieces.
Each piece has 2 oz protein and ½ cup carb.
**try substituting orange zest and 2-3 tsp orange extract for a different taste!
