Ingredients

1 package of spaghettini

½ cup grated parmesan cheese

3-4 lemons

2/3 cup olive oil

Fresh basil

Salt and Pepper

Small amount of pasta water

Preparation

Before juicing the lemons, zest at least 3 lemons. Juice the lemons to yield 1 cup of lemon juice. Whisk cheese, olive oil, lemon juice and add 1-2 ladles of pasta water. Add this to drained spaghettini. Add lemon zest, several thin slices of lemon, salt/pepper and fresh basil and serve.
