Ingredients

6 oz uncooked spaghetti

1 tsp fresh thyme leaves

1 tsp grated lemon rind

2 tbsp fresh lemon juice

2 tsp olive oil

2 tsp capers

1/4 tsp salt

1/ tsp freshly ground pepper

Thyme sprigs

Preparation

  1. Cook pasta according to package directions, omitting salt and fat.
  2. While pasta cooks, combine thyme and next 6 ingredients in a large bowl.
  3. Drain pasta, reserving 2 tablespoons cooking liquid. Add pasta, reserving cooking liquid, and 1 tbsp cheese to lemon mixture in bowl, toss well. Sprinkle with remaining 1 tbsp cheese and serve immediately.
