Ingredients

2 cups unsalted butter

1 cup powdered sugar + more for dusting

1 tablespoon lemon juice

4 cups flour

1 t salt

zest of 5 lemons

1/2 teaspoon lemon extract

Preparation

Whip the butter until it’s light and fluffy.

Turn off the mechine and add the powdered sugar. Then turn back on again and mix for about 3 minutes.

Mix in the lemon juice, zest, and extract.

Add the flour and salt, mix until combined. Place in a low flat container and refrigerator overnight.

To Bake: Preheat oven to 400º Line Pans with parchment paper

Using a 1 ounce scoop make balls and place them on the sheet pans. they can be relatively close as they don’t spread much.

Bake until the bottoms are just beginning to darken, 8-10 minutes.

Remove from the oven , allow to sit for a few moments just to cool a little then sift generously with powdered sugar.
