Ingredients

1 C. peanut (or vegetable) oil

6 T. fresh lemon juice

8 T. tamari soy sauce

6 T. toasted sesame oil

2 scallions, very thinly sliced

5 pressed garlic cloves

1 T. ground ginger

eggplant, zuccini, and/or yellow squash

Preparation

Combine all ingredients (except main veggies) in a jar and shake well.

For Veggies: Slice 1/2" thick. Dip slices in marinade and place on hot grill. Cook for about 15 minutes, turning after 7. Brush slices with marinade throughout cooking and just before serving.

Also can be made on a Foreman grill with slightly shortened cooking time.
