Ingredients
4#’s fingerlings washed, halved
1/2C olive oil
1C olive oil
1/2C lemon juice
6T chopped dill
4t lemon peel, grated
24 garlic cloves
Preparation
Spray 2 rimmed baking sheet with non stick oil. Toss taters with 1/2C olive oil. Salt and pepper. Bake for 30 minutes. Whisk EVOO w/lemon juice and zest and dill. Toss garlic and 2T of this dressing in separate bowl. Add garlic to the 2 baking sheets of potatoes. Bake another 15 minutes. Toss with remaining dressing when done.
