Ingredients

1/2 cup all-purpose flour

1/4 cup soy flour

1 Tablespoon baking powder

2 Tablespoons Sucanat

1/4 t sea salt

2 eggs

2/3 cup organic milk

1 cup ricotta

1 lemon, zested and juiced

Preparation

Whisk dry ingredients together in one bowl. In a separate bowl, whisk wet ingredients. Add dry to wet and mix until just incorporated. Spoon 1/4 cup for each pancake in a greased pan or griddle over medium to medium high heat. Flip pancake once bubbles appear on the top. Cook a few minutes more until done.
