Ingredients
3-4 cups cooked brown rice
2 tbsp. butter or olive oil
1 c. chopped onion
1 clove garlic, minced
juice and grated rind of 1 lemon
1 tbsp. chopped parsley
salt and pepper
Preparation
Saute the onion and garlic in butter or olive oil. Add the cooked rice and the remaining ingredients, tossing and stirring to combine and heat through, about 5 minutes.
