Ingredients

4 eggs, separated

1/3 cup lemon juice

1 tsp grated lemon rind

1 1/2 cups sugar

1 Tbsp butter, melted

1/2 cup sifted flour

1/2 tsp salt

1 1/2 cups milk

Sweetened whipped cream (for serving)

Preparation

Beat together egg yolks, lemon juice, rind, and butter until thick and lemon colored. Combine sugar, flour, and salt. Add dry ingredients to the egg mixture, alternating with milk. Beat after each addition. Beat egg whites until stiff. Blend into batter using low speed on mixer. Pour into 8" square baking dish or pan. Set in a large pan of hot water (like you would for custard). Bake at 350 for 45 minutes or until golden. Serve warm topped with whipped cream.
