Ingredients
1 tablespoon olive oil
4 boneless chicken breasts
20 garlic cloves, unpeeled
2 bay leaves
6 sprigs fresh thyme
zest & juice of2 lemons
500ml chicken stock ( oxo or other cube ).
freshly ground black pepper.
Preparation
Heat oil in a large saucepan & cook ( seal ) chicken over a medium/high heat for about 4 mins until slightly golden. Add the garlic & cook for a few more minutes. Add the herbs,lemon zest, juice & stock. Stir & bring to just boiling. Cover with a lid, reduce heat & poach gently for 20-25 minutes, oruntill the chicken is tender. Remove chicken. Season to taste with black pepper. Serve on a bed of fine noodles with a little of the juice spooned over the chicken & a green salad. Enjoy!!
