Ingredients

Pie Crust, baked

Filling:

2 egg whites

2/3 C. sugar

2 tsp. grated lemon peel

1/4 C. lemon juice

1 C. heavy cream

Preparation

Combine the egg whites, sugar, peel, lemon juice in a mixing bowl. Beat until stiff. This takes quite a long time. Whip cream and fold into lemon mixture. Turn into baked shell. Top with crumbs. Chill. Can be frozen for later use.
